Ingredients:

2 LBS. Lean Ground Beef or Turkey
1 Medium Onion
1 1/2 handfuls of cilantro
2 cups of uncooked rice
1 egg
6 crackers
salt and pepper
1 1/2 Tablespoon cumin
1 Tablespoon garlic powder

Directions:

Chop 1/2 of onion and all of the cilantro. In a mixing bowl add the crushed crackers, beaten egg, turkey meat, chopped onion and cilantro, 1 cup or rice, cumin, garlic powder, add salt and pepper to your taste.

Place your pot with water and let it come to a boil.

With your hands mix everything together. Once mixed well, start forming the albondigas, not too big and not too small, and drop the abondiga in the hot water repeat until you are done with the meat. The albondigas will float to the top when they are partically done. Gently turn the albondigas so they are cooked all around.

In a small frying pan saute 1/2 medium onion chopped and 1 tomatoe chopped. Drop them in the broth. Add 1 cup ot rice and simmer soup until rice is cooked.
