Ingredients:

10 lbs of Beef Tripe
1 Onion
4 Bay Leaves
4 Garlic Cloves
Salt
Red Enchilada Chile ( 2 lbs of dried red chile made into enchilada chile)
1 Cheese Cloth Bag
2 Big cans of Hominy

Side Spices (quantity depends on your taste):

Quartered lime
Finely chopped Onion
Dried Oregano
Salt

OPT*
Pork Pata (pork feet) amount you want
1 Onion

1. Clean Tripe:
Scrape fat off, and cut into about 1 to 3/4 inch cubes.
Wash tripe with water until fat is not it found in water.

2. Put whole onion in the pot with Bay Leaves and Garlic cloves (or put ingredients in a cheese cloth bag then in pot) add 1tsp salt.

3. Cook in medium heat for 4 hours.

4. After Tripe is cooked take out the Onion, Bay Leaves, and Garlic Clove.

5. Add Red Enchilada Chile and hominy, let simmer

Serve in a big bowl, add side spices to your taste

PATA:

Put Pata in a pot with a quartered Onion and cook under medium heat for 1 Hour.
Add to cooked Menudo
