Ingredients:
Chicken breast or whole cut up chicken OR Beef: chuck or soup meat
1 onion 1 tomatoe 2 garlic cloves 2 bay leaves 1 bag of soup mix vegtables (corn, cabbage, celery, potatoes, carrot)
In a dutch pan (olla) place meat, chopped onion, minced garlic, cut up tomatoe, and bay leaves. Bring to a boil, when it starts to boil, bring down the flame to a medium cooking, add salt and pepper at your taste. Cook meat (chicken for 35 minutes or beef for 1 hour). Add vegtables and cook for 30 minutes or until carrots or potatoes are done.
Serve with Mexican rice
