Ingredients:
2 lbs Pork (or Beef) 2 Medium potatoes (or more or less depends how much you want) 1 large union 2 clove of garlic 2 lbs roasted and peeled long green chilies
Directions:
Cube pork and sauté in pot with oil until brown (brown in batchs set aside). Chop onion and place in pot with some oil to slightly cook. Put the pork back in the pot and continue to cook. Finely dice garlic and add to the pot and continue to cook. Peel and cube potatoes to bite size pieces, add to pot with enough water to cover food. Cover with medium heat until potatoes are almost cooked, add chopped chilies to pot. Cook until potatoes are done. Add salt to taste.
Serve with Spanish Rice, refried beans and flour tortillas.
